The story behind-

  1. Symphony cakes

    It was inspired by the classic Opera Cake but with my own unique "tunes"

    The opera cake is a French masterpiece created in the mid-20th century by pastry chef Cyriaque Gavillon. His goal was to design a cake with balanced layers. His wife Andree, named it Opera, as she felt its elegance and balance mirrored the sophistication of an opera performance.

  2. Tea cakes

    The name "tea cake" comes from its original purpose: to be enjoyed with tea. In 19th-century England, these sweet, light cakes were specifically made to complement the afternoon tea ritual. Over time, the name spread across cultures adapting to local flavors but always keeping the tradition of pairing with tea.

  3. Swiss Rolls

    The Swiss roll is named for its association with Switzerland, where rolled cakes were popular, though it likely originated in Europe, particularly Austria or Germany. From this classic rolled sponge, I began my journey of turning a passion for baking into a profession.
